From the Refrigerator: Gorgonzola Dolce Dressing

I am a sucker for homemade salad dressing, in fact, I can’t remember the last time I bought salad dressing (other than Marie’s Blue Cheese for homemade Buffalo Wings). I frequently throw together whatever ingredients I have to make a dressing for whatever salad or vegetables I am serving for dinner. And tonight it was Gorgonzola Dolce Dressing for a Cobb Salad.

My favorite thing about this frequent player on the menu at our house is that I always seem to have all the ingredients on hand.

Gorgonzola Dolce Salad Dressing

4 oz. cream cheese (softened)
1/3 cup sour cream
2 tbsp lemon juice
3 dashes Worchestire Sauce
1/4 cup half and half (or whipping cream or whole milk – whatever you have on hand)
4-5 oz. Gorgonzola Dolce (crumbled) – or similar cheese, I like the smoothnes and sweetness of Gorgonzola Dolce
salt and pepper to taste

With an immersion blender or blender, mix together all ingredients except Gorgonzola Dolce until smooth and consistent. Slowly add half of Gorgonzola Dolce until almost smooth. Finally, whisk in the rest of the cheese. Refrigerate at least 1 hour before serving for flavors to meld together.
