Buffalo Chicken Bites
4 cups cooked chicken, coarsely chopped, I suggest rotisserie
4 ounces cream cheese, softened
1/4-1/2 cup hot sauce
3/4 tsp garlic powder
1/2 tsp onion powder
salt and pepper
1 3/4 cup shredded cheddar cheese
1 cup flour
3 eggs, lightly beaten with a splash of milk
2 cups Panko breadcrumbs

Buffalo Chicken Bites
These little suckers are irresistible! I bet you can’t eat just one! Enjoy them right out of the oven when still piping hot with a glass of beefy red wine. If you don’t like or have blue cheese, substitute swiss or parmesan – most cheeses work great!
10 tablespoons unsalted butter
3/4 teaspoon salt
2 cups unbleached flour, sifted
5 large eggs
1 cup blue cheese, crumbled
freshly ground black pepper
1 egg, beaten
With the onset of fall, tasty field greens and lettuce mixes are back in full blast. I love a simple salad of mesclun mix, wafer-thin sliced apples, blue cheese crumbles and toasted pecans. Lightly tossed with a homemade balsamic dressing… mmm good!
Figs are starting to appear at the farmer’s markets, and what better way to start the weekend than with an Easy App to go with a glass of wine!
(makes 12 rollups)
2 heads radicchio lettuce
6 figs (sliced in half)
1/4 lb blue cheese (I like blue d’ auvergne for its sweetness and creaminess)
a few tablespoons honey
Separate and wash leaves of radicchio. Leave to dry.
Arrange half of a fig on each leaf. Top with a slice of blue cheese and a drizzle of honey.
Sprinkle with sea salt and serve!
I am a sucker for homemade salad dressing, in fact, I can’t remember the last time I bought salad dressing (other than Marie’s Blue Cheese for homemade Buffalo Wings). I frequently throw together whatever ingredients I have to make a dressing for whatever salad or vegetables I am serving for dinner. And tonight it was Gorgonzola Dolce Dressing for a Cobb Salad.
My favorite thing about this frequent player on the menu at our house is that I always seem to have all the ingredients on hand.
Gorgonzola Dolce Salad Dressing
4 oz. cream cheese (softened)
1/3 cup sour cream
2 tbsp lemon juice
3 dashes Worchestire Sauce
1/4 cup half and half (or whipping cream or whole milk – whatever you have on hand)
4-5 oz. Gorgonzola Dolce (crumbled) – or similar cheese, I like the smoothnes and sweetness of Gorgonzola Dolce
salt and pepper to taste
With an immersion blender or blender, mix together all ingredients except Gorgonzola Dolce until smooth and consistent. Slowly add half of Gorgonzola Dolce until almost smooth. Finally, whisk in the rest of the cheese. Refrigerate at least 1 hour before serving for flavors to meld together.
