Happy Fourth!

Make-It Monday goes to the kitchen this week for a Fourth of July tart! It’s just perfect (go figure, it’s from Martha)!  Have a happy and safe holiday weekend!

For the crust:
5 cups all-purpose flour
6 tablespoons sugar
2 cup (4 sticks) unsalted butter, chilled and cut into small pieces
4 large egg yolks
1/2 cup ice water

For the creme fraiche filling:
2 packages cream cheese (8 ounces each), room temperature
1 teaspoon pure vanilla extract
8 ounces creme fraiche
1 cup confectioner’s sugar

For the tart:
4 ounces semisweet chocolate
1/2 cup apricot jam, for glazing blueberries
1/2 cup raspberry jam, for glazing raspberries
2 tablespoons water
2 pints red raspberries
Confectioners’ sugar, for dusting
1 pint blueberries, picked over

Key Lime Tart

key-lime-tart-revisedUnlike my darling husband who thinks it’s not dessert unless there’s chocolate in it, I love to sweet, tanginess of something citrus after a big meal.  It was always a toss up in our house between who made the better lemon meringue pie – Grandma or Nona (our great aunt).  This recipe is a tribute to them, with a twist of my own.  I look my favorite tart dough recipe, flopped some key lime curd on top and then whisked up (literally) the egg whites for their killer meringue.

Key Lime Meringue Tart

For the crust:
1 1/2 cups all-purpose flour
3/4 cups cold unsalted butter, cut into 1/2-inch pieces
1/2 teaspoon salt
2 teaspoons sugar
3 to 5 tablespoons ice water

For the filling:
5 teaspoons lime zest
1/2 cup fresh squeezed key lime juice
4 egg yolks
1 (14oz) can sweetened condensed milk

For the meringue:
1/4 teaspoon cream of tartar
4 egg whites
1/4 cup sugar
1/4 teaspoon vanilla

Strawberry Tart with Basil Whipped Cream

Strawberries are one of the surest signs of Spring and they are arriving in abundance in the grocery stores, which means their appearance at the farmer’s markets is in the near future. Here I’ve added my favorite herb, which is already overflowing in pots on my balcony.

Strawberry Tart with Basil Whipped Cream

Sweet Tart Dough
1 stick (1/2 cup) cold unsalted butter
1 1/3 cups all-purpose flour
2 tablespoons sugar
1/4 teaspoon salt
1 large egg yolk
1 1/2 tablespoons ice water

Strawberry “Filling”
1.5 lb strawberries, hulled
1/4 cup sugar
2 tsp cornstarch
1 egg yolk
1 tbsp water

Basil Whipped Cream
1 cup heavy cream
1/4 cup tightly packed basil leaves, chopped
1 tbsp sugar

Tip of the Day: Cookie Cutter Perfect

I love to use miniture cookie cutters to make decorative pieces to adorn the edges of my pies and tarts. It’s so easy and creates such a beautiful dessert. Simply cut shapes out of the pastry dough using a miniture cookie cutter, then use an egg wash to adhere them to the edges of a pie or tart.

Here’s an example of a peach pie I made this summer with hearts out of pie dough…

and an apple tart I made last week out of puff pastry…

For the tart I simply rolled out the puff pastry, then used the mini maple leaf cutter to make the crust for the tart, then stuck it all together with an egg wash…
