The Incredible Chocolate Cake

I know, I’m showing you a picture of a cupcake and I turned my chocolate cake recipe into a batch of chocolate cupcakes, but I’m still calling it The Incredible Chocolate Cake.  That’s because it is incredible. makes one 8-inch layer cake or 24 cupcakes

1 3/4 cup flour
2 cups sugar
3/4 cup unsweetened cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp kosher salt
1 cup buttermilk
1/2 cup veggie oil
2 large eggs
1 tsp vanilla extract
1 cup freshly brewed hot coffee (this is the secret ingredient!)

for the frosting
6 oz semisweet chocolate, melted and cooled
2 sticks butter at room temperature
1 large egg yolk
1 tsp vanilla extract
1 cup plus 1 tbsp powdered sugar

To make the cake: Preheat the oven to 350 degrees.  Place cupcake liners in muffin tin pan.

In an electric mixer with the paddle attachment, mix the flour, sugar, cocoa powder, baking soda, baking powder and salt at a low speed.

In a medium bowl, whisk together the eggs, buttermilk, oil, and vanilla.  Slowly beat the buttermilk mixture into the dry ingredients, just until incorporated, then slowly add in the hot coffee.  The batter looks really thin, but this is what makes them so light and fluffy.

Pour the batter into the prepared cupcake liners.  Bake for 20-30 minutes or until a toothpick comes out clean.  Let the cupcakes cool in the muffin tins for about 20 minutes, then make the frosting.

In the bowl of an electric mixer with the paddle attachment, beat the butter at medium speed until light and fluffy.  Add the egg yolk and the vanilla and beat for about a minute.  At low speed, add in the powdered sugar.  Once the ingredients are well incorporated, fold in the melted chocolate.

Frost the cupcakes and dig in!  They’re awesome!

    to make the layer cake (instead of cupcakes) do I change the baking time or temp at all?
