Last night I picked a bunch of arugula from my garden to make a simple as easy starter salad for dinner. You have to try this salad as it may sound a little strange, but it is really delicious and so simple.
Simple Arugula Salad
enough lettuce for two starter salads
small piece of Parmesan cheese, grated
2 tsp olive oil
2 lemon wedges
fresh ground sea salt and pepper
Start by washing the lettuce in ice cold water. Place in salad spinner and dry.
In a large bowl toss lettuce with olive oil. Separate onto to plates. Place one lemon wedge on each plate.
In a medium-sized saucepan, boil about 1-2 quarts of water. When the water is at a rolling boil, gently crack and slide each egg into the water. Poach for about 3 minutes – you don’t want to overcook the yolk as it makes the best part of the “dressing” for the salad.
Remove from water and place on salad. Quickly sprinkle salad with cheese, salt and pepper.
