Cranberry Coconut Chews

Yesterday, while at a Thanksgiving workshop at Heavenly Hydrangeas, Susan Poneman served these incredible cookies. The flavors are delicious and the texture is that perfect chewiness!


Cranberry Coconut Chews

1 1/2 cups (3/4 lb.) butter or margarine, at room temperature
2 cups sugar
1 egg
1 tablespoon grated orange peel
2 teaspoons vanilla
3 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups dried cranberries
1 1/2 cups sweetened flaked dried coconut

Preheat oven to 350 degrees.

Cream butter and sugar until pale in color.
Add egg, orange peel, and vanilla, mix until combined.
Slowly mix in dry ingredients just until incorporated. Roll dough into 1 inch balls and place on baking pan with parchment paper. Bake for about 10-15 minutes, until edges are golden.

  1. I’ve been trying to find a recipe involving cranberries/coconut since it’s what I have in my kitchen, this looks good. How many cookies does it yield?

  2. I just made these cookies. They do not look like the picture above … they spread more with thin brown edges and mounded up more in the center. I wanted for them to look like the picture where they are evenly distributed, chewy and flat. The cookies turned out crisp and not chewy.
    They have good flavor. Wish the appearance was better…
