I love the sweet and spicy aroma of snickerdoodles in the oven and since it is such a gloomy day here in DC, I thought they would make a perfect afternoon snack.
makes about 50 cookies
3 1/3 cups flour
1 tsp nutmeg
1 1/2 tsp baking powder
1 tsp salt
1 cup butter, at room temperature
2/3 cup sugar (plus extra for dusting)
2 tsp vanilla extract
2 tbsp cinnamon
Preheat oven to 350 degrees.
Combine the flour, nutmeg, baking powder and salt. Set aside.
In a large mixing bowl, cream the butter and sugar until light in texture and a pale yellow color. Add the eggs and vanilla. Mix until combined. Slowly add the dry ingredient mixture and stir until well combined.
On a dinner plate, mix together the extra sugar and cinnamon.
With the dough, form one inch balls then roll them in the cinnamon sugar mixture. Place on an ungreased baking sheet.
Bake for 10-13 minutes or until golden brown in color. Take out of the oven and leave to rest on the baking sheets for a couple of minutes before transferring to a wire rack to cool.
