Tip of the Day: Keeping Apples from Browning

We all know how unappealing it is to have a cheese plate with slices of apples that are brown from sitting out. This is caused by oxidation, and can easily be prevented by either brushing the surface of the apple slices with lemon juice or soaking the fruit in water that has had lemon juice or cider vinegar added to make it acidulated. The “acid” helps reduce the pH on the surface of the fruit, which causes less browning. If soaking the fruit in water, be careful not to oversoak – 15 minutes is plenty.
