Nothing like Popovers on a Saturday morning

As a child one of my favorite things to come downstairs to on a Saturday morning was popovers… With a crispy outside and a steaming inside, popovers are such a delight! Just add a small pat of butter or a dollop of your favorite jam and ah, heaven!

My mom always used James Beard’s Recipe which is below… The secret is putting the popover pan filled with the batter in a cold over and THEN turning the oven on to 400 degrees and baking for 35-40 minutes.

James Beard’s Popovers
(makes 12)

2 eggs
1 cup milk
2 tbsp melted butter
1 cup flour
1/4 tsp salt

Whisk together eggs, milk and melted butter. Add flour and salt and whisk only until incorporated. Overmixing causes the popovers to not rise as much.

Grease a popover pan and fill cups 1/3 of the way full (using all the batter amongst the 12 cups). Place pan in cold oven. Turn temperature to 400 degrees and bake for 35-40 minutes.

Serve immediately.
